Recipes - Make The Best Veggie Stock

You need some stock ASAP and all you have is water and Minnie's Soup Mix. Well guess what, that's all you need. Make this soup ahead of time or just when you need it and add it to any recipe that calls for veggie stock (or even substitute for chicken stock for a vegan option).

To make 4 cups of delicious vegetable stock (that's 1 liter) here's what you need:

Ingredients:

  • 2 Tbs of Minnie's Soup Mix
  • 4 cups of water
  • 1 Tbs of butter, ghee or oil of your choice
  • salt & pepper to taste
  • 1 Minnie's Bay Leaf (optional)
  • 2-3 pods of cardamom (optional)
  • ginger powder (optional)
  • 1/2 tsp of Minnie's Garlic powder (optional)

Method:

  • In a small bowl, rehydrate Minnie's Soup Mix by soaking 2 tbs of mix in enough water to just cover. (5 min)
  • In a medium sized pot, heat 1 Tbs of butter, ghee, or oil.
  • Add rehydrated Minnie's Soup Mix to the pot and stir. Fry for 1 minute or until fragrant.
  • Add 4 cups of water, salt & pepper to taste and any or all of the optionals above (Minnie's Bay Leaf, cardamom pods, ginger powder, Minnie's Garlic Powder). 
  • Bring to a boil. Lower heat, cover and simmer for up to 30 minutes.
  • Strain and use as broth in any recipe requiring broth.
