The Slice

Happy Orthodox Easter, and happy sham ennesseem,  our very own Egyptian celebration of Spring! Enjoyed by all Egyptians! Marked by very specific foods eaten outdoors, in gardens, parks or on the banks of he Nile.

These transitional weeks between Spring and Summer do not offer us a variety of products to dry. The strawberries and oranges are over, the stone fruits are just beginning to hit the market and arent sweet enough to work. Event the tomatoes planted this cycle arent not up to par for drying.

So we decided to experiment!

We are trying a new method to dry tomatoes. Along with our usual thin-sliced tomatoes, we are now drying tomatoes cut in half. It takes a much longer time to dry, but it offers another great way to prepare tomatoes.  I think this new dried tomato will find its way to great success, especially when making tomatoes in olive oil.

We are also experimenting with an instant cup of soup. Using Minnies dried soup mix with instant ramen noodles bought at the super market, I am trying out ratios, proportions, taste. Almost there! It will be a nice addition to our list of products!

And in a few weeks we will be sourcing some of our vegetables grown on roof tops of homes in Cairo! We will be partnering with  ‎Grow Green Now ازرع زرعة
