Why are Solar Dried Fruits & Vegetables  
a better choice now more than ever?




The world is going through uncertain times at the moment self isolation, masks covering faces, home schooling, working from home, gatherings banned. A virus is causing havoc everywhere and people are rushing to the stores to stock up on all sorts of things from staples to fresh food and household goods. What better time is it to talk about dried fruits and dried vegetables? About their benefits and their uses, the ease to store them and to use them. 

Let me explain the ecologically friendly drying process we use. We have adapted an ancient method of drying- using the sun's energy and have added to it a simple technology, a solar panel.

The process of solar drying uses low temperatures to remove the water that is inside the cells of the products, this causes the cell to shrink when the water is removed while the cell wall remains intact.

  • Dried fruits and dried vegetables  retain most of their nutritional value
  • Rehydrating them will fill in the cells again, however they may not regain their original size
  • Dried Fruits and dried vegetables are stored in a cupboard away from direct light and are available to use immediately: no defrosting, no heating, no peeling, no cutting or preparing
  • Add the dried fruits to your favorite cereal, plain yogurt or dress up a salad 
  • Make your own vegetable broth using dried vegetables or just add a spoonful to any soup, sauce or marination for a more intense natural flavor
  • Dried fruits and vegetables are healthy foods because they are dried with no sugar added and no preservatives nor taste and color enhancers.

Januray to March 



Already 3 months into the new year.
So much has and is happening since January 1, 2020 and I have been meaning to write since then, but ....

Time to catch up now!

We have developed new products since I last wrote. Now we powder practically every product. And on our list of available products we have created a section for powders.

Why powders? Because instead of buying flavored yogurt, you can buy the plain and add a spoonful of any fruit powder, no sugar added, no preservatives= a healthier alternative. And even better if you make your own yogurt at home. You can use them to flavor the batter of your pancake or your cake, add the powder to your cereal or vanilla ice cream The options are as numerous as you are creative.
And we have become well known for our  powdered onions, garlic, beetroot, carrot  and tomatoes.

Our latest creation: fruit dragées! Remember the dragées made of almond covered with a hard layer of sugar, melabiss or ملبس؟ Well we have taken our dried fruits to another level: fruit dragées, cubes of dried fruit rolled in the best milk chocolate in town, what a treat!!

We still have your favorite items such dried mango, dried strawberries, dried bananas and our dried soup mix that replaces the store bought flavorings.

And last but not least, we are working on our very own website which will be ready for launching very soon. So look out for it.

Here is our July list of available products. The items that are back in season are :

Apricots, mulberries-white and red, peaches, prunes and watermelon.

We have a couple of new items. Powdered dried fruits that you can sprinkle on ice cream, rice pudding, yogurt or just to flavor water. The powder is 100% natural, no additives and no anti-caking agents. And of course no sugar added.  We have experimented with them  and a few restaurants are using them for summer freshness .

Apricot powder, orange powder and strawberry powder.

We have also powdered garlic, onions and tomatoes to make your summer cooking easy and pleasurable.

It has been a while since I have posted here. I have had a very busy last few months.

Since taking on the charge of Slow Food Cairo in late August after the departure of Sara El Sayed who has gone on to pursue a PhD in Arizona, I have traveled to Chengdu China to represent Egypt at the 7th Slow Food International Congress, then I took some time off to travel locally to Mersa Matrouh and now I have hit the ground running.

So much catching up and so much work ahead.

But the good news is that we have dried a lot of mango this year, hoping that our supply of delicious dried mango lasts until the next mango season.  We also stocked up well on dates from our own palm trees and we are experimenting with drying Mejdool dates from Bahareya Oasis.

Orang season is almost upon us, followed by strawberry then Balaika banana and tangerines.

We are also very busy with a number of exciting venues. Here we list what is coming up in the next few weeks:

Find us:
Saturday 28 October: at JW Marriott from 4-9pm on ring road. This is a fundraiser for Abul Reesh Childrens' Hospital. Proceeds will go the hospital.
Tuesday and Wednesday 7 and 8 November at Azhar Park fro 11 am as part of the Drosos Foundation Conference on creativity.
Thursday and Friday November 9 and 10 at the Kempinski on the Ring road from 10 to 6pm as part of the Kattameya Ladies event on Healthy Living. A fun event full of activity.

Friday 10 November: A slow Food Zaytouna Olive Picking festival: at the Zaytouna farm of the Ismaileya Road
Saturday 11 November at the Conrad on the Nile River for the fundraiser of the Diplomats of Asia bazaar, a lovely event.

Sunset
Shades of blue

I spent a wonderful 3 weeks at Long Beach on the North Coast of Egypt, enjoying a sea with crystal clear waters that are shades of blue and turquoise, white sands and a breeze that blows gently all day long, picking up towards sunset to calm down again a little later.

Sunsets are over the sea and some days they are more spectacular than others. At times, the red disk seems to melt in the sea and at others the clouds play games with the sun and hide it. It peaks through and sends its rays through the thinner clouds. The horizon lights up in a fire of orange and reds. It is breathtaking.

The sea dances between the shades of blue and turquoise and when the winds pick up, the waves are crested in white. They come rushing to the shores of white sand and break sometimes gently and others violently. Their movement changes the sea floor and creates a little ridge a few meters away from the shore, creating a pool in between.


Even though I am not at work, I cant help think of what is next in line to dry.
The figs have come in season  at the coast and I cant wait to go back to make our signature fig and mint jam. The sea has also inspired a couple of recipes that you can find under the Recipe tab.

Mangoes are also coming in force and we will begin drying them soon. Looking forward to going back to work to prepare all these wonderful things.

So much is going on in March.  Mother's Day Celebration, Flower show on March 15 at El Orman gardens, The Womens Association Spring Fair and so much more....

And nature is getting ready to burst into colors everywhere. I love it. So here is the calendar for the events that we plan on being part of:

Friday 3: at Eish & Malh a restaurant downtown Cairo-really downtown, at 20 Adly Street. Eish & Malh are serving strawberry cream made with our very own dried strawberries

Friday 3: our products will be at CFC at the Day for Mama event beginning at 11 am.

Satruday 11: at the Womens' Association bazaar, held in a private garden at 25 Adul Feda street Zamalek

Saturday 18: At the Fish Garden in Zamalek, with WASABI celebrating Mother's Day.

The Slice


This is the last day in November and the first day of rabee' awal ربيع اول, the third month in the Islamic calendar. The month has come and gone so quickly I didn't even realize that I hadn't posted for November. We were really busy and time just flew by. But the good news is that we have had a few new experiences during November, the most effective one being the International Handicraft Show 2016. 

The first Friday of the month began with the CSA Annual Food Festival in Maadi- a lively and lovely event that brings so many vendors and people together, followed by the WOW ( Women of the World) bazaar held at the Catholic Church in Maadi.

Then came the annual Asian Diplomat bazaar held at the Conrad. A great venue, with a wonderful and discerning crowd.


Later in the month we, a group of Slow Food members,  were invited by a colleague, Ussama Ghazaly, to take part in the International Handicraft show for one entire week. And that has kept us really busy, excited and engaged.  It took place in Cairo at the Exhibition Hall 19. If you have not been, you have missed an amazing festival, where creativity, taste, elegance, and beautiful made in Egypt  items were on display and for sale. The people came in throngs and we were kept on our toes the entire time.  The best advertizing possible for products made in Egypt with love and pride.  The area where we were was sponsored by Alexbank and was called 'ابداع من مصر' or ' Egyptian Creativity".



Under the umbrella of Farmers Market and continuing with our summer experience at Sahel, we were invited by Diwan Heliopolis branch, to hold a farmers market in their garden last Saturday. That too was a great experience! A first for our group in Heliopolis and a good one to repeat. The bookstore is located in  a lovely villa and holds a superb inventory of books in many languages.

The Slice 

This newsletter focuses on the events that I took part in last September and October.


On September 1, CBC Sofra aired the interview that Ms Magy Habib conducted with me and Minnies team.  It was so timely because I was getting ready to travel to Jordan later that week to conduct a training session on solar drying of tomatoes.  I had been looking for material to show during the training and this was just perfect because most of the interview was focused on tomatoes .  

The airing of the interview which was conducted on Minnies premises in Dahshour, resulted in a number of telephone calls from people who loved the idea of solar drying and who wanted to replicate it or  who at the very least wanted to hear more about Minnies Dried Fruits & Vegetables.

In Jordan, I had the pleasure of conducting a five-day training session for 16 ladies from various regions around the country. Honestly, I dont really know who was more excited, them for having an Egyptian instructor who was just recently on TV show them the ropes, or me for having the opportunity to share my expertise with these eager and fun ladies. We worked side by side in the kitchen and on the roof of the building where we elected to set up our dryer. We dried tomatoes and red peppers and apples. We extended our sessions into making apple cider vinegar and packing solar dried tomatoes in olive oil and garlic. They improvised and used long plastic bags as aprons. We shared recipes. We laughed and talked and had lunch together.


Then, later that month I was invited to participate in a program that is dear to my heart: the  Slow Food- Terra Madre -Ark of Taste conference held in Torino, Italy, every two years.  I was one of 16 Egyptians members of  Slow Food Egypt, representing our country at this magnificent international event. The opening ceremony was very moving with 1500 Slow Food delegates from around the world converging in the piazza in front the Torino Museum and celebrating biodiversity and our slogan: They are giants but we are millions.....

In late October I joined my colleagues at Slow Food Cairo in celebrating dates season and shared in the 4th annual Date Palm Festival at Fagnoon. The day was full of activities, tastings,  and learning experiences.  And this year the weather was on our side, just a gorgeous day full of fun, good food and conviviality.

And just last week, I was invited dinner at the Chef's Table at the premises of Nafas, the agro-culinary School in Maadi. A five-course meal featuring wahi rice, goose breast and war' 3enab maki and to top it a delicious date fondant with ishta ice cream!! So special! so nice! Thank you Yomna, Pam, Yara, Alia and every one else who helped make this a very special dinner. 



It has been a great beginning to our new season! I will post pictures later.

Goodbye summer

I would like to take a moment to reflect on our experience this summer.

As you may have read, we opened a store in Sahel, Egypt's North Coast, this summer- fifteen producers together, exhibiting and selling their products under one umbrella:  Farmers Market El Sahel 

It was a great experience for all of us partners because we learned about what you like at the beach, and what we can offer you there and how to improve on what we offer.  We learned about sharing space and working together and supporting each other.  We learned that delivery is a must. We learned that word of mouth is very important, and that being featured in  two summer magazines: Cairo to Sahel and Sahel Community Times is the best thing that can happen to us. Our face book page received a few thousand visitors and as many comments and likes. So thank you for being part of our success and thank you for a great summer.

Matrouh figs
Have you tasted the figs this summer? Especially the ones coming from Marsa Matrouh? Well, we have been busy drying figs and making jam. I took the old time favorite fig jam, cut the sugar by 30%
and added a twist of Matrouh to it by using a hint of mint. It turned out to be exquisite! The I replaced the mint with a sprig of homegrown lavender to tease your buds  and that too turned to be really special.

We are also working with Matrouh fig growers and are drying their varieties of figs. You will see them soon at the market. Really really nice flavors.

And the mangoes!! What a color when dried and what an intensive flavor!

Apple crescents: are the famous tart Egyptian apples that appear on the market in late June for a very short period. We extend their shelf life by drying them so that you can enjoy them thorough out the year.
Grapefruit: the pink variety that grows on our land under safe agriculture practices
Peppers: ( out of stock at the moment) sweet bell peppers cut into small pieces and to add to you favorite tomato sauce, salad or feta cheese. pepper flakes this season

5- LE30/BOX:

Apples, yellow apples: peeled and sliced, they make a delicious snack
Fruit Mix: a medley of seasonal fruits to whet your appetite  
Pears: Egyptian khashabi variety whose flavor is intensified with drying
Soup Mix: we have added cut up tomatoes to the blend of grated zucchini, carrots, onions, kale and herbs. Solar dried. Use in soup or tomato sauce for pasta and lasagna. Look for the recipe under the appropriate tab 

6- LE35/BOX:
Banana coins: (out of stock at the moment) Egyptian organic Balaika bananas great for snacks, on yogurt and oats

7- LE40/BOX:

Apricots:  Egyptian, dried in our solar tunnel with no sulfur, no sugar added no preservatives, hence their brown color

Cherries: pitted and split, dried to a chewy bite, great on cereal, in baking and snacking, on yogurt, name it and eat it
Kiwi:  (out of stock at the momnet) imported, tart golden slices, delicious in salads and to snack on
Mango:  we have dried new varieties, great color and texture, and of course very tasty
Mushroom: (out of stock at the moment) white button mushroom, grown by Tarouty Farms, add them to tomato 
Prunes: Egyptian plums , pitted, split and dried. A great addition to your morning cereal
Strawberries: Egyptian, a beautiful color, a wonderful fragrance and a delicious taste

8- JAMS AND MARMALADES: low sugar, vacuum sealed for a longer shelf life

Date Delight: a recipe handed down by my mother, not a jam and not a paste, a delight, serve it with fresh cream
Pink Grapefruit and pomegranate marmalade: a very unusual and tart marmalade made from the best pink grapefruit. LE40 for a 400g jar
Harankash or Physalis jam: a soft a delicious jam, full of pieces of fruit. LE40 for a 400g jar

9- BISCOTTIS:

These twice baked cookies are lactose free and fat free. We use molasses instead of sugar and we add fresh grated ginger, turmeric and blend of Minnie's Dried Fruits which may include raisins, dates, orange pieces or cherry bits. These hard biscottis are great for dunking in your favorite tea or coffee, or just nibbling on them. A box LE25

A dream come true for Minnie's! And a must TRY!!

Ganache, a French Chocolatier in Cairo, agreed to experiment with dipping half a dried fruit in chocolate. He did! In white chocolate, in milk chocolate and in dark chocolate! And the result? In our boxes,  we arrange a mix of our seasonal fruits dipped in one of the 3 chocolates: apples, bananas, dates, mango, pears, kiwi, strawberries dipped in one of the three chocolate flavors. You may also custom order your box: one fruit coated with one chocolate or one fruit with mixed chocolates. Your choice!

The elegant handmade boxes come:

Lemongrass:  20g, grown on our premises under safe agriculture practices.
Peppers: 30g of very hot and spicy peppers grown for export under strict agricultural guidelines
Rosemary: 30g, grown on our premises under safe agriculture practices. 

2- LE 15/BOX:

Bay leaf: grown on our premises under safe agriculture practices. In other words we use our own home made composting from Minnies kitchen
Dates:  grown on our premises under safe agriculture practices, delicious and a great picker upper
Raisins: dried from wither red or green seedless grapes grown under safe agricultural practices

3- LE 20/BOX:

Tomatoes: grown for the export market, and dried in our tunnel, a real treat
Olive tree leaves: dried and used in making tea


4- LE 25/BOX:

Apple crescents: are the famous tart Egyptian apples that appear on the market in late June for a very short period. We extend their shelf life by drying them so that you can enjoy them thorough out the year.
Grapefruit: the pink variety that grows on our land under safe agriculture practices
Peppers: sweet bell peppers cut into small pieces and to add to you favorite tomato sauce, salad or feta cheese. pepper flakes this season

5- LE30/BOX:

Apples, yellow Syrian apples: peeled and sliced, they make a delicious snack
Fruit Mix: a medley of seasonal fruits to whet your appetite  
Pears: Egyptian khashabi variety whose flavor is intensified with drying
Soup Mix: a blend of grated zucchini, carrots, onions, kale and herbs. Solar dried. Use in soup or tomato sauce for pasta and lasagna. Look for the recipe under the appropriate tab 

6- LE35/BOX:
Banana coins: Egyptian organic Balaika bananas great for snacks, on yogurt and oats

7- LE40/BOX:

Apricots:  Egyptian, dried in our solar tunnel with no sulfur, no sugar added no preservatives, hence their brown color

Cherries: pitted and split, dried to a chewy bite, great on cereal, in baking and snacking, on yogurt, name it and eat it
Kiwi: imported, tart golden slices, delicious in salads and to snack on
Mango:  we have dried new varieties, great color and texture, and of course very tasty
Mushroom: white button mushroom, grown by Tarouty Farms, add them to tomato 
Nectarines:  grown locally for export, we use only the best fruitsauces, bechamel sauces, soups and gravies
Peaches: grown locally for export, we use only the best
Prunes: Egyptian plums , pitted, split and dried. A great addition to your morning cereal

8- JAMS AND MARMALADES: low sugar, vacuum sealed for a longer shelf life

Date Delight: a recipe handed down by my mother, not a jam and not a paste, a delight, serve it with fresh cream
Pink Grapefruit and pomegranate marmalade: a very unusual and tart marmalade made from the best pink grapefruit. LE40 for a 400g jar
Strawberry jam: a soft a delicious jam, full of pieces of fruit. LE40 for a 400g jar

9- BISCOTTIS:

These twice baked cookies are lactose free and fat free. We use molasses instead of sugar and we add fresh grated ginger, turmeric and blend of Minnie's Dried Fruits which may include raisins, dates, orange pieces or cherry bits. These hard biscottis are great for dunking in your favorite tea or coffee, or just nibbling on them. A box LE25

Ganache, a French Chocolatier in Cairo, agreed to experiment with dipping half a dried fruit in chocolate. He did! In white chocolate, in milk chocolate and in dark chocolate! And the result? A powerful combination of chocolate melting and of fruit bursting with flavor! A must try, even if you think you don't like fruit and chocolate.

1- LE 15/BOX:

Dates:  delicious and a great picker upper

2- LE 20/BOX:

Cherry tomatoes: grown for the export market, and dried in our tunnel, a real treat
Tomatoes: dried just right and a wonderful red color. Add them to sauces for pasta, or to olive oil and garlic


3- LE 25/BOX:

Apples, Ana: finally the first Egyptian apples are available. Their season is very short so we are working as fast as we can to stock up on this tart apple. We cut it in crescent shapes and they are chewy and delicious
Grapefruit: the pink variety that grows on our land
Oranges: sweet navel orange slices, great to munch on or in a scup of tea or a free salad
Pepper: red and yellow bell peppers are back in our stock, use them in any tomato sauce or in gravy, add them to soup or salad, they add color and flavor 

4- LE30/BOX:

Mandarines: cut with the skin in beautiful orange colored rounds
